- use of salt to raise the boiling point of the water
- use of vinegar to raise the acidity of the water, softening the shells and making them easier to peel
- use of cold water to prevent overcooking. 4 minutes may be over the top. 2 minutes seems to be enough for most, since after all they wont overcook in your stomach! That said, I've seen some recipes that cool for 20 minutes (though not under running water)!
the eggs crack because you're boling them too long....just put eggs in cold water...bring to boil....cover with lid and remove from heat for 17 minutes....into ice bath...DONE....the eggs won't crack. Yeah...and four minutes of wasted water...geez.
Okay, now I have seen several videos that let you know how to tell if an egg is boiled or raw. What I want to know is how to people get them mixed up to start with? Do you put your raw eggs and boiled eggs in one basket? I don't and I've never heard of anyone who does!
@siogyumolcs I agree. I let the eggs in cold water for 6 minutes - I change the water one time, to get cold again -, and make the same thing at the end.
The shell doesn't stick if you boil them, crack them, then put them in cold water. They peel so easy and don't stick at all.

Don't ever boil eggs that have come straight from the refrigerator, because very cold eggs plunged straight into hot water are likely to crack.
