  • My master taught me to make all manner of traditional Japanese items from scratch. Miso was not one of those only because it takes so long. I am interested in making my own shoyu....how does this differ concerning moromi miso?

    The SAKE (japanese liquor) is made from malted rice, too.

  • @TheFoodTour I think call it malted rice is a little wrong. The rice they mention in the video is called Koji (Japanese), its kind of yeast, yes. Koji is used to ferment the soybeans. You can search on Google to know fully about Koji and how to make it. Though its not recommended to make Koji at home :D.

  • @CorneliaBui I found `malted rice` as a translation of Koji in a search engine, but it seems like the software didn`t do a good job. You`re right and I will use `Koji` as koji in English, Thank you !
