captain nemo is the captain of a submarine in the book 20,000 leagues under the sea and he died fighting a giant sea monster

I have no idea where you got the idea that he died fighting a sea monster, in the end of 20,000 we last see him and the Nautilus being sucked into a whirlpool.

However he does not die even then, as he does appear in a "sequel", he live on into old age and becomes the last surviving crew member of the Nautilus, at which point he docks his ship at one of its secret ports on an island. He dies when he scuttles his ship to save the protagonists of this book.
