I haven't had a vaccine in over 2 years and I haven't been sick in over 2 years. I don't exercise on a regular basis. Last full check up a few months ago the the doctor said I had perfect health. Odd, I know.
Congrats. You may be in a healthy minority. Keep doing what makes you happy as long as it does. Decide which symptoms you are willing to live with and do not change until bothered.

There are other factors you're missing here.
For example, the fact that cows don't naturally eat corn, they eat grasses. Corn makes them more prone to e coli. Which gets passed to humans.
Another example, eat less meat = more corn available for other, more useful purposes.
