  • Thanks! Always wondered what the secret trick/ingredient that made yakiniku/hibachi/teppanyaki fried-rice/cha-han so delich at restaurants! :D ...I also read a few other posts, a japanese mom and wife using Chuka Aji in their family fried rice recipes, so this must really be the secret! :)

    ...also, upon further research of other secret ingredients for ChaHan, I also read someone using Gomasio (ground sesame seed salt) as their secret. Any opinions on Gomasio?

    Can't wait to buy some.

  • would using instant rice to boil and puff up be ok to use in this or would i need to used steamed rice ?

  • what's the difference between black pepper and white pepper? does it taste all that different?

    It does taste different. Black pepper is a bit spicier than white pepper. They both come from the same plant it's just processed differently resulting in different flavors. You can certainly use black pepper in place of white pepper.

  • @goodmediaproductions I actually don't know how to make good chicken teriyaki since I am not really a fan of it. People tend to make it too sweet. I like it grilled with salt and pepper (yakitori).

  • clearly you havent tried egg with oil cause your saying it must taste like crap. you add salt to your egg. oil has no taste.

    A word of advice, fix your manners first then fix your eating habits. judging from your picture your an older guy and its really pathetic to see someone such as yourself insult other peoples methods over the internet. I'm happy that you like egg with butter but I don't understand why you would insult other peoples likes....over the internet...you're a sad being.

  • those of you health freaks, ill give you an advice that works.

    if your frying vegetables you don't need oil, you can actually use the mroe purest thing out there......WATER!!! yes water. use 2 table spoons of water before they all resolve to cook your vegetables. for the egg you can remove half the yellow yoke and cook it on the pan(egg can also be cooked without oil, use nonstickpan) don't throw the white cause its good protein.

    I found something that is very similar to Chuuka Aji called Yuki Way You by Youki Food Company. I was able to find it at several Asian food stores in my area. Like Chuuka Aji, It also has MSG.

  • quick tip to everyone. if you're making fried rice, it is best that the rice is like spread out- you know not bulky because it will make the seasoning even when you put it to the rice.

  • Chuka aji... That jar looked just like Bonito dashi, (i.e. Instant dashi) . I can buy that in Iowa where I live. Bonito dashi is fundamental to miso soup. Not so secret ingredient.

  • I contacted ajinomoto usa to find out.

    Apparently they do not sell Chuka aji in the states.

    There is something that has similar ingredients called Youki Gara Soup Stock. I haven't tried it but my mother in law told me you can get away with using that if you run out of Chuka aji.

  • First time seeing Japanese style fried rice. Nice video. Ajinomoto? Isn't that the same company that invented msg? Do you know if the Chuka aji contains msg? I don't have anything against msg but would like to know when I'm using with it.

  • It's a chinese seasoning containing salt, vegetable and pork extract, oyster sauce, animal fat.

    It's hard to find now for some reason. I'm guessing that there is a ban on importing certain products containing beef or chicken. Hopefully you can find some in your area.

  • Here are the seasonings we used:

    2 Tbsp - Soy Sauce

    1 tsp - Mirin (type of rice wine. you can use sake)

    1 tsp - chuka aji (chinese seasoning)

    1 tsp - white pepper

  • Mirin is rice wine vinegar, and is not alcoholic, unlike sake. So are you sure it's alright to substitute mirin for sake?

  • That is a good question. From our experience, we used sake because we ran out of mirin and found the taste was similar. I should have wrote that you can use sake if you are not able to find mirin in your area. Thanks for your question.

  • Thanks for your reply. You could also suggest omitting the mirin all together because 1 tsp of it doesn't really affect the flavor of the rice because it's delicate flavor is probably masked by the chuka aji, pepper and soy sauce anyway. Try it. :)
