This french lyric is more sophisticated than you might think. Not about Cajun food but about natives dancing themselves into an altered trance state using the mantra Jambalaya in this song. It means they meet the the God within themselves they call Mother earth, an internal voice they hear. Its utterly beyond the European mind but certainly not the song writer.

I think Johnny Stark had a hand in this gig, and he had to know it would not play well anywhere outside of France. I think he hoped they'd get a check and they would destroy the negatives (smile). English and french song versions use jambalaya differently. In English its food It's a musical mantra in the French version.
