  • @hitokage4 It is meant to clean the prawns. You could use this method to clean organs as well, that is if you eat them.

  • I just made this earlier for family everyone loved it only problem was i used a bit to much Doubanjiang because i was using larger portions. But other than being really hot it was great though my Doubanjiang seemed not as smooth as yours do you have a name brand you would swear by? Also love everything you do I recommend your channel to all my friends. :)

  • I just made this and it is AMAZING! I used corn starch instead of potato starch (it's just used as a thickening agent, and both do not have flavor) and I used Rooster brand chili garlic sauce instead of the chili paste (same brand that sells Sriracha). The sauce is incredible. It's a really easy recipe, so don't be afraid to try it!

  • @WeeChocoBunny The sand vein is the shrimp's digestive tract. It contains shrimp poop. You do not want to eat that.

  • @MURDERW0RSHP , I am not sure about your country chicken stock , but in New Zealand chicken stock is slightly sweeter and contain celery . Chinese chicken stock is a little bit saltier (contain MSG too). i hope this help.

  • @cenimeing: Washing the starch-coated prawns creates an invisible goo-like layer all around it, which protects the prawn flesh from "shrinking" or turning a bit dry and "shredded" when cooked. Look closely at 4:01 and remember how starched/washed prawns look. When you attempt to cook prawns (example: in another dish) the same way without any starch at all, you will see the difference They won't be as "plump" and juicy as these are.

  • @retrolovebomb No, actually a leek is different. Unfortunately in the states we confuse Japanese green onion with Welsh onion because the translation is confused in Japan as well. Leeks are sweeter, heartier, and thicker around on average than the long green onion in these videos. I know this, because I originally assumed that he meant leek also and my Japanese friends laughed at me. heh.

  • @WhoaThatWasAwesome The first time is to remove the fishy smell from the prawns (essentially unnecessary) and the second application is to add a bit of crisp/crunch texture after they're fried. Almost like an extremely thin batter.
