Shark fin and crab meat in a lobster challenge? To have so many different types of seafood in the dishes seems to take away from the point of the challenge, namely to focus on the singular ingredient, the giant lobster.
i learned a lot of different dishes fromt his show... Some of them came out very good. Some, I could tell i was missing a few things that I did not see them use. I really miss this show...
@LordNelson87 the shark isn't usually thrown away. The meat unfortunately except the fins are full of a deadly toxin which will makes it unfit for human consumption. Certain countries like finland basically bury the shark or hang them and literally let them rot until the meat secretes all the poison out. The meat is then consumed in soups.
@MaintainedInsanity Correct. The meat is full of Ciguatoxin and Carchatoxin (A and B). Ciguatoxin can also be found in other predatory fish that have the E coli in it (Ciguatoxin producing E coli) such as Barraccuda. (Mostly predatory tropical fish.)
@Apocalypss In many restaurants in Hong Kong, mid tier or higher level of restaurants that have the capacity to server banquets, you will find many dishes served with diced fruits in combination with mayo. So the use of mayonnaise in Hong Kong cooking is not that uncommon. One example of such dish would be a crab claw wrapped in minced shrimp/lobster/crab paste; it's usually served with a sweet mayo or an orange sauce on the side.
I'm not looking foreward to the future...where our grandkids will be laughing at us for having micro-wave emitters around in our house, the same way that we were in disbelief that our grandparents covered their oil in baking skin...to help tanning, and cancer, so it seems...

These shows are taped 12 years ago... maybe even longer, from 1995-1998. Today if you still cook like this you can't even get a job as a sous chef at a decent restaurant in NYC or Tokyo. Especially Kobe, he was over rated.
I hate to break it to you, but most of the Iron Chefs still own their own restaurants. These battles were in a special format. You're making the rather idiotic assumption that it's the only method of cooking they know.

Yes I do understand that EVERYTHING is being over fished but I didn't really understand exactly how serious this problem was until I watched an educational video "sharkwater" They have killed off about 80% of the entire shark population for shark fin soup. It relates to an artist who was famous for his use of the color red. As such the original carpaccio was made with red meat. Of course the style for preparation spread to fish later and now is mostly made with fish. Of course considering the higher health risks of red meat, it's not surprising.

I just hate time...time ruins everything and the chefs would never could expand their maximum skills freely...Same issues in all other exams and competition
The problem is that without equalized time, tools, etc. you simply can't get a measure of a chef's skill vis-a-vis another chef. To argue that time constraints are illegitimate is to ignore what actual cooks have to do. Restaurants are all about keeping up with the crunch and producing good food quickly. Time constraints let you see if a chef can repeat success. The chefs on the show routinely say that it is very difficult and a true test of their skills.
you are right...I just imagine if we have never had the concept of time in our minds, so theres no needs of time speeds ..not only saying in culinary works but also in everything we do...just let the skills flow out
