I like to take lime juice and then put the thinly sliced red onions in the lime juice for a few seconds just to take off some of the bite. The lime also adds even more fresh flavour to an already refreshing summer salad.
We make ours a bit different. Just watermellon, cilantro, feta, mint, and red onion. The dressing is balsamic vinager, a touch of salt, and a touch of EVOO.
