In theory you can use any liquid but the problem is the height of the column. In the case of water it would be over 10.3 metres high! I suspect oil would be not far short of that figure also.
The problem with the home made aneroid barometer is that it will also change due to temperature fluctuations. Some form of temperature compensation will be needed.
