We do make juice from PICKED, WASHED fruit to sell within 24 hours as unpasteurised juice. It has much more flavour than pasteurised juice and can be refrigerated and used with 3 days, or frozen.
Apples which fall on to grass are OK if washed, if there are sheep or chickens in the orchard its more of a problem. Apples which have fallen on to earth can be pressed for juice to ferment to hard cider, sometimes we offer the better windfalls cheaply for cooking and preserves
