  • @zentenc – Yes. They started with proofing the dough on the linen seam side up. When they used the flipping board to transfer the dough, the seam side ended up down. Note the flour location on the batard portion of the video. Also, look at the start to see Martin flipping.

  • I love the ease and elegance with which this slashing is done. What a great result, too.
