As much as I like the idea, I am not sure it will ever catch on. The main appeal to touch screens is that there is no need for other input devices. They need to think of ways it can add more functionality. The block and checkers demonstrations were little more than virtual redundancies of what the users were doing on top of it, and there is no need for accessories to handle photo editing on a touch screen. Here's hoping someone more creative than I can think of some truly unique uses.

It just looks a lot easier for designing complex objects, and machinery that require to be assembled from multiple parts.
The stuff they showed is just used to develop the technology. Imagine this being used in mechanical engineering software where you can stack parts together to form a working model of what you're designing.
As for the color and picture filter thing, you could throw that into a stylus pen and hanve knobs on the shaft of the pen twist to adjust color saturation and such. That would be a pretty good idea IMO
