I love this game.

I love playing Co-op the most. the moment its boss battle time, we ( me and my friend, no matter who we use and who the boss is ) come at the boss screaming and jumping like crazed trolls.

yes you can fight him in single player! :D you'll need to unlock some abilites first, like the... err, fist of ruin (I haven't played the game in a while, some things I just don't remember ^^), and the ability that let's you swing, and he is after some gates in one of the earlier shaolin levels, before entering the monastery =)

Shaolin Monks takes place inbetween MK and MK 2, that's why Shang Tsung is old and Liu Kang is alive in this game.

Well... I used to have trouble with it. Not anymore. It took me a while to learn the mechanics behind that combination as it wasn't enough to just do button-mashing. At least... I believe that was the reason why I always had trouble with that move.

Actually it is. Even though Midway tried to make Mortal Kombat an adventure type game, like Mythologies and Special Forces, those were epic fails. But Shaolin Monks was done just right.

It's quite tricky actually. Both you and your friend have to press L2 at the same time while running directly towards each other. I think that's how it works. It's been a while since I've actually played this game.

In a way, it is two-player mode but it's also basically the same as one-player mode. (One-player and two-player a.k.a. "Ko-op" story mode are the same thing.)

And Ermac can be found at the Wu-Shi Academy.
