If you add the garlic first, don't you burn the garlic by the time the stems are done? I would think it would turn the garlic bitter unless you add a watery liquid.

Finally!!! Now I know what I was doing wrong, I never cut the stems from the leafs so the leafs would be over cooked and wilty when the bottom part was done! Thank u.

Some constructive criticism:
The music went up too high at certain points, which started to overwhelm the talking
An aside about marinating meat was off-topic iMO.
Some points about cleaning/chopping the Bok Choy would have made this more complete.
