Morimoto may seem very traditional to us, but he actualy infused alot of western techniques into his cooking tot he point where he had alot of grudge matches from other japanese chefs pissed at his techniques, made for some good battles, Love iron chef Japan!!!!!
I think it's a good strategy to pick an iron chef for a cross-culture cuisine battle since the theme ingredient will probably be related to the challenger.
its the one thing that i hate about sakai, he's an iron chef but it appear he hate very ingredient in his battle, maybe he likes truffles and foie gras only
He either thought Sakai-san was a more worthy adversary because of his skill and battle stats, or he wanted an advantage because he knew the secret ingredient would be Chinese-themed.
They often do that and pick a "secret" ingredient that favors the challenger. The Iron Chefs are well versed in the time constraints, kitchen layout and equipment, so an ingredient the challenger knows keeps the battle from being too lopsided.

i feel like kobe and morimoto make the most radical dishes.
chen and sakai really stick to their styles of cooking but do it VERY well
and michiba is just awesome in every battle.

my favorite part of this show is when kaga is announcing the theme ingredient.
he uses different tones for different kinds of ingredients and its one of the few parts of the show where we dont hear english voice actors.

Poor Sakai, he always looks so dissapointed with the ingredients he gets for his battles. He always manages to do an astounding job, though.
