  • Eat the salad right after making it to avoid the papaya getting soggy. Shredded papaya can be stored in a plastic bag, in the fridge for up to two days.

  • Before shredding, remove all the green outer skin. Stop shredding before reaching the seeds.

  • I love eating Laotian papaya salad. The modified version of our salad, called the "Thai" style is sweeter than our papaya salad, but both versions are good in their own way. But of course I prefer the original Laotian papaya salad.
