  • I work at a denny's and these aren't over easy eggs, they're basted eggs when u add a little water and cover. Poached eggs are require more water for the eggs to be submerged and over easy eggs are cooked without water and flipped.

  • Over easy = white on top and not just yellow. You usually see this kind of distinction in the mid west versus 'you have to flip it for it to be over easy'. No I don't. It just has to be white on top for it to be over easy.

    Hint:: always rinse egg yolk off plate with cold water. Hot solidifies the proteins and makes it difficult to clean...peace...

  • yeahhhh, i do it almost exactly the same, but i dont:

    1. Use water, WTF? Y WATER? That just make em all wet and such!

    2. use a lid, really? a lid? n00bs use lidslol, but i seriously dont use a lid -_-

    3. NOT use salt and pepper, their not finished unless u got a lil sp in their :P

  • yeah...you'd think someone using the name "guru" would know that you need to include "over" somewhere in "over-easy" eggs. And you sure as hell don't need to add water to the eggs....if you're worried about the yokes breaking when you flip just use the lid/steam to lightly cook the top before flipping. This is maybe the dumbest thing I've ever seen.

  • @Sodylin yeah...I realize that but you really don't need to add water...or at least 1/4 cup like he did...the heat trapped from putting the lid on will steam the top. His final product looks rather runny to me. On the bright side...at least he didn't hard fry 'em....I've seen a lot of that on youtube...

  • @selphiexfairy Agreed. I use the lid also, but I always flip em for over easy. This is sunnyside up, bordering on poached because he used a heck of a lot of water. Look delicious anyways! Just gotta get the terminology correct :)

  • I'm a short order cook.The best way to make over easy eggs. You just cook the egg until the white is just cooked on the bottom but still very runny on top on very high heat. Then you do the wrist flip. Works every time, no broken yolks! Try it out. Maybe I'll post the video.

  • I've never seen water used like that on eggs, but it makes sense. My friend was making sunnyside up eggs, and i noticed the top of the whites were still uncooked near the yolk. She asked how to fix it, i said just flip them and serve them over easy (same damn thing besides aesthetics).

    seriously though, the water? that would take away all the flavor, if you fry an egg with a lid just put it in there with margarine or butter, salt and pepper it while it cooks lid it on highish heat for a minute or so and done

  • You don't need the butter if you have a good nonstick pan, butter is just extra cholesterol, use virgin olive oil, but you still need the butter for the bread.

  • this egg cooking method seems to be a hybrid mixture of sunny side up, poached, and over easy. And the only reason i think these could qualify for over easy is because they seem to have cooked over the top by way of steaming them... i've tried it and it works well. however if you leave them in the water too long waiting for that film to form over the yolks the yolks will have a little bit consistancy of hard boiled yolks.

  • Not over easy eggs. Don't not use water, but needs butter because margarine taste like vegetable oil. Over easy eggs need to be flipped to cook the egg through or can get salmonela eating a raw egg.

  • @kellyjam1 over easy is just a term to describe how much the eggs are cooked, not the technique really. It is just commonly associated with flipping the eggs because that is the easiest most obvious way to get the job done, but steaming the tops of the eggs works in virtually the same manner, over easy just means cooking the "tops" (yolk side) of the egg a little bit. Over well means cooking both sides fully. This is over-easy since the steaming slightly cooked the "tops"

  • @kellyjam1 Actually this is the "basted" or "country style" way of frying an egg. Sunny side up is cooking the egg slowly on low heat so you don't have to flip it or cover. Eggs over easy is when you flip the egg over and you continue to cook until the white's set but the yolk's still liquid.

  • The butter acts as oil.Butter is thicker so the eggs don't stick as much.

  • @aljay17 you can use oil instead of butter. Basically you need a fat to keep the egg(s) from sticking to the pan. Butter is just a preference for this dish.

    The traditional method for basted eggs is drizzling hot fat on top of the egg while the bottom cooks, but covering and steaming, sometimes with a broth, to cook the top is very popular.
