Atheists do NOT think "all this is happening" is unknowable, that's agnosticism. Atheists say there is no evidence for a God or Gods.
The world presents itself in a strange and mysterious way? You're right about people seeing reality in different ways, and that's why science is cool. The alien might see the tree differently, but it's science will give the same chemical composition, and reveal it's volume in 3D space as our science.
It's a weak argument, I admit, but here goes.... If science of the physical is all we have to understand the world then our understanding is limited by the physical world. The big bang being an example - conditions prior to the big bang (in that they are unfalsifiable) will remain outside of our scientific understanding and hence 'unknowable' by sciences standards.

To know something is unknowable you would need to know everything including that thing that is unknowable.
Failing that requirement you can not make that claim EVER
Besides atheist has nothing to do with "Knowledge" it is the "Non-Belief" , "Rejection of Belief"
