made these for my mom's birthday gift....for a different flavor (espeacially if you want to roll it in a chopped berry of some kind) is to try adding Basalmic Vinegar. instead of the Brandy. And Ameretto if you're rolling in nuts.

Yes, it can. Drambuie, frangelico, ginger liquor, would all be fine. As would extracts.
I would keep the maximum of any water or alcohol based addition to the same volume as the brandy though.
