For PC users check out Project Lasso... I don't know if they have a MAC version, but the program is invaluable to people with limited resources who want to use as much of their pc for a single application (games) or want to keep certain things low priority(iTunes). I believe you can assign CPU affinity and the level of priority the program uses. It lets you terminate gracefully as well as has a game mode that put everything on the back burner except the game and processes it uses.
