Searing in the chicken on the stove helps "sear" aka keeps in the juices so you get a more moist chicken. Honestly, you can omit this step if you'd like. i found a lot of recipes on ga roti will just tell you to bake the chicken as is without searing. i just tend to sear my chicken before roasting because it was a trick i learned in culinary school.

Post got cut off..... I have a question. It is alittle *Silly, but please entertain me. What is the purpose of searing the chicken on stove? Can this extra step be omitted? What are the consequences of omitting this step? I plan to get together with me friend and attempt to make this dish on the weekend. As usual, you presentation is excellent. Here is suggestion: Use more background lighting, that way it puts the focus on the food/dish. I know it is a *Silly request.
