If you already have it as an mp3/m4a file, then you can right click -> get info -> options -> and set the start and stop time you want for the file. Then, right click again and click create mp3/m4a version. iTunes will make another file for you as a separate track.

Anyone know how I can seperate out the songs I want on Itunes instead of just having an hour long track?
