  • @fleur257 you can actually mix 2 tbs of flour with 2 tbs or so of water and that will make a glue that you can use to bind the cheese rolls.

  • Hi - have you ever made sumsum or maybe it's simsim bread? My husband loves this bread and we used to get it but the bakery closed. It is a sweet bread with sesame seeds on top with honey or I think simple syrup?

  • @OMGaNEWBIE you can use what ever dough paper that you like :) Even GF works :)

  • @Jessabilly Yes, you can mix 1 tbs of flour with 2-3 tbs of water and use that as a glue for the rolls :)

  • Hi Dede, I just made these, and oh my god so yummyy... but I used won ton wrappers instead; i used fetta cheese w/mozzarela, kolby & jack cheese. I am from Albania and tend to like mediterranean food...I will definitely impress once I make these for guests. Thank you so much ! you're awesome : )

    the ackawi is really good , u could use it for kunafa , but first put it in water a few times to make it without salt , and it'll taste wonderful

  • Would these be good wrapped in filo dough then fried as you've done here? (I just like filo better than egg roll wrappers) Or, if you brush the filo with butter, then maybe they could be baked instead of fried? Just curious. I like to try different things. I just subbed to you, BTW.

  • Exactly, just use phyllo dough and brush with butter and bake until lightly browned :)

  • Wow! I just made a few rolls about five minutes ago and they are delicious. I wasn't able to find the ackawi cheese so I used mozzarella cheese instead but it was still delicious. Thanks for the recipe and keep up the good work! =)

  • THank you for your comments. Here's what you do with shankleesh, first cut up the shankleesh very small. Next cut up some onions, tomatoes, fresh mint and mix these with the shankleesh, next put them in a plate and drizzle some olive oil on top. IF you'd like you can also add some cayenne pepper to spice it up :)

  • dede, i need to know the name of the cheese you used to mix with the akawi and i also need to know if u recommend to fry those only in olive oil or any oil will do?

  • instead of egg wash ..my mom uses just plain old simple water...eggs make ure hands smell bad..other than that kul sena winty salma!!!

  • True, eggs do smell if they are not fresh but it does add wonderful color. Or you can use a butter spray as well :)

  • Yes you can make cheese pies, use my easy dough recipe and just fill it with the same cheese mix that I use in this video. Hopefully one day I will have a TV show, maybe food network will find me :)

  • Halloum doesn't melt well, you can use mozerella instead of ackawi, i often do that when I can't find ackawi :)
