yea a little dry but l reckon if u cooked it on a lower heat for the same time it would be good but thanks for the video the pork looked like it made it i would have not been able to resist pulling loads of pork off and eating it lol
marinade will always dry out your brisket. The natural fats and acids in a brisket will do enough for the moisture issue. just add flavor pardner! think of the slaves that originally cooked it. they didnt have H.E.B. go natural, go with mother earth, but always, GO AGAINST THE GRAIN!

I have a Brickman smoker, but the fire doesn't maintain, I think Weber is probably a better somker so that you don't have toe adding charcoal all the time. Do you use mesquite or briquets?
magman, I don't have specific time to add more coals. I just open the little door on the side of the smoker and check the coals about every 4 to 5 hours. I add about 10 to 15 more if it looks like they are starting to burn out... Hope this helps.
What was your temp? Ive got a barrel type of smoker as well and it seems to get too hot. Good video and gotta love that Texas heat! About 50 out right now here in Baytown.

question, why didnt you put the pork to bed? or did you? i wrap mine in foil and put it in a cooler with a towel over top of it. Another hour, and it falls apart. Watching other folk's cooking on the WSM makes me happy! Nice video!

magman, I don't have specific time to add more coals. I just open the little door on the side of the smoker and check the coals about every 4 to 5 hours. I add about 10 to 15 more if it looks like they are starting to burn out... Hope this helps.

I keep the temp around 250 max for briskets... Just build a small fire to the side and don't get into a hurry.. Always remember "Slow & Low"
