@andrewcolinwilson she was some sort of demon who fed off of people through painting, the brushes had the power to put people into paintings and give Mrs. Briar their souls, thats how she stayed alive for centuries, when the brushes were burned, the people were free'd and she died/disappeared because she had no more souls to keep her alive.

The way I see it, the lady hunts for the head by trapping people in paintings, which gives power to the head. The head then gives the lady some kind of immortality, which she loses when the brushes are destroyed, killing the head the old woman in a single (forgive me) stroke.
