The tune is based off of the Quaker song "Simple Gifts". Copland used a variation of Simple Gifts in Appalachian Spring. So both this hymn and Copland's work are base on the Quaker song. Copland did not base his work off of this hymn, both merely share the same source material

You are correct. The lyrics to a song "Lord of the Dance" (BASED upon the tune) were written by Sydney Carter in 1963. This arrangement by Larry Fleming followed later.

In fact, the majority of the music I have performed at Disney has been sacred. In fact, the directors at The Disney Honors (their top choral festival) don't allow the pop stuff many choirs tend to do these days. For pop repertoire, they will suggest another of their festivals- Festival Disney.
