I don't play with sheets, I learn all the songs I play without sheets and remember them in my mind. In that way you don't have to use sheets EVERY SINGLE TIME you must play the song ^^
And for me it doesn't take so long to remember the songs... Guess it varies from person to person?

OOh I remember being grabbed by a proff to turn pages for him when he was accompanying his 'star' student for the concerto trials! The Ravel concerto no less and he was making up the orchestral part so I had to have an eduacated guess when he wanted me to turn. He grabbed me on the way onto the stage ( I had no chance to look at the score)
