  • Sir jee, I am sorry to bother you again but can you do a video on Rogan josh (aromatic lamb dish from Kashmir.) & Yakhni Pulao , Also between the way to jammu & kashmir there are roadside dhabhas where I always used to have Raajma with desi ghee & I can swear it is the best curry in the world, so please if possible I would like to try my hands on the above recipes in traditional ways, you will agree with me I am sure that microwave does not have the magic of home made anghethi :)

  • Harpaal ji, I tried your Chicken tandoori last Saturday (I have never cooked b4 in my life, I only knew making tea and Maggie noodles), I am in my village at present and dont have a oven here so I cooked chicken tandoori on an charcoal anghethi and it was the best chicken my family has tasted ever. I am going to try out your chicken tikka masala this sunday. Your procedures are so simple to follow. Thank you Sir jee. Please do a video on mutton goshtawa (a kashmiri mutton recipe).

  • looks delicious and i want to make it but i dont want to buy all those ingredients that i wont use again just for one dish lol. also, the chicken tikka i had at an indian market (sell food there too) was a deep orange/red color. maybe they added a food coloring or somthing else. tastes great tho. i usually order chicken tikka and chicken tikka masala with safron rice and naan. love the stuff!!!

  • I think adding Shimla Mirch and Lal Piaaz to the marinade would be great. Then adding them to the skewers between the Chick Tikka before baking them Pa Ji. :) I also noticed you did this with Paneer Tikka MahaRaj.

  • Bamboo sticks are easily available with vendors who keep imported vegetables. It is an optional ingredient to the dish. It just gives flavor to the recipes.

    Firstly let me tell you that you are a genius.. The way you cut vegetables am just in an awe of you..

    I don't have an oven but a convection - microwave only.. so can you tell me the exact temperature and the time it should take for me to cook Chicken Tikka.. ??

  • In the microwave convection mode, you need to first preheat the oven to 220 degrees celsius. Then reduce it to 180 degrees celsius and cook for fifteen to twenty minutes. Do try it out and let us know how it turned out to be.

  • I tried to make tikka. But when i made the chicken in the oven the color of the chicken was white. NOt that nice brownish color. I didn't have time so i just marinated for 30 mins that day.

    Any tips on what could have gone wrong this time?

  • Very interesting technique, I have never cooked Chicken Tikka using separate marinades, does the separate marinades make the flavour stronger?

  • Yes, they do for sure and the authentic recipe of Chicken Tikka is also cooked with the same method. Thus, it is better if you cook Chicken Tikka this way. Do try it out and let us know how you liked the recipe.

  • Chef, the recipe looks wonderful, however I would have one question: I life in Hungary and there's no way I can get my hands on some Kashmiri red chilli poweder, but there are other chilli powders available, like Cayenne pepper or Chilli powder (as simple as that but the hot type), which is more closely, how should I adjust to the recipe? Also we have premium quality hungarian pepper powder, but that's not chilli so not hot at all... Can u give me an advice, pls?

  • @sanjeevkapoorkhazana i did try yesday but i did littel bit change in it what i did i used the same marinate and what did i hade somepork means and i add 2 spoon in there and made hole in chicken and put that means in there and then raped the bacon around and put it in the oven on 180 for 1 hour trust me it was amazing im going to eat that today as well inbit

  • You can cook the chicken tikka in the convection mode at 200 degree centigrade for 10- 12 minutes.

  • Is it possible to replace oil with ghee at certain parts of this recipe? Will it enhance the flavours of the marinade?

    Also, instead of a convection oven, can we use a home gas grill to replace the oven/tandoor too?

  • The oil can not be replaced with ghee. If you do so, the taste of the end product will not be as good as without ghee.

  • The aunthentic chicken tikka recipe has mustard oil in it. You can replace the mustard oil with olive oil . However there will be slight difference in the taste.

  • These pastes are not readily available in market. You can make them at home by blending the cashewnuts and melon seeds with water.

  • Yes you can use any other oil but the taste would differ. You can also grill it using barbecue grill.

    i know a simple recipe of chiken tikka. that is most authentic and tradtional.

    i will just write the ingradients and their explanation.

    you need to rub chicken witha mixture of haldi, (turmeric) khane ka soda, that is baking soda, chilli, garlic paste, salt.

    When turmeric reacts with soda it gives red colour and you do not need to put any paapkrika or colouring hting.

    If you like please suggest.

  • The coarse powder of roasted bengal gram is known as gram flour. It is widely used in Indian Cookery and is used as a thicking agent for gravies and curries.

  • @mingalabaa to be specific its call "Sattu" in hindi, widely used in Eastern UP and Bihar.

  • Sattu is different from besan.. It can be prepared from roasted dalia, barley or any other grains whereas the besan is prepared from only roasted dalia.

    I live in US and consider myself to be quiet a competent cook. I never knew about the besan trick for the marinate, though I add freshly ground ajwain into my marinate. Also while putting the chicken to the screwer I add wedges of onions and capsicum.

    I would love get the actual recipe of Amritsari fish and the payaa soup.
