I just made this today and it was really really yummy. However, I had to make it super thin because the middle seemed to be kinda dark and moist when I make it thicker.
Is the center supposed to be totally dry, or can it be moist a bit?

yes it's not exactly smida but very close! In Morocco you can find different textures of smida: the fine one, the rough one, etc. so semolina is smooth and fine. the rough one would be more like cornmeal. hope this helps :-)

Thank you for the lesson on harcha. I fondly remember eating harcha in Morocco with cheese (la vache qui rit). I don't remember the harcha being sweet. Is it always made with sugar?
if you try this recipe you will find that you wont taste so much the sweetness of the sugar, but it will enhance the semolina flavor. you can cut the sugar by half if you would like, but a little sugar is necessary for that kick :-)

the sugar... eternal question of health.
you can simply omit it! or reduce the amount. the sugar gives it that little hint of sweetness.
