    I like my kheer on the thinner side (but of course, not too thin). Would you suggest I stick to milk and sugar, or replace both with condensed milk?

    Also, do you really mean to "boil" the milk, or just simmer? I'm afraid it will burn... Thank you so much for the video! I love indian food!!

  • @cardiganmimi : To make it thinner, stick to milk and sugar. Also, you can never leave milk alone - it willl burn the moment you look away ;) If simmering makes you feel more confident, do that :)

  • I tried using Jasmine rice for this recipe. It formed large clumps and I had to throw it all away and restart with long grain rice and had no problems. Can you please tell me what went wrong ?

  • @irfand4 : Jasmin Rice has a much higher level of starch - hence making your kheer sticky and clumpy :(

    Try it with basmati rice next time or long grain rice :)

  • You know what I'm curious about. What if I use date sugar in my kheer recipe instead of regular sugar? I thought Date sugar is the predominantly used sugar in this recipe :/

  • @MundusLitterae : You can use date sugar. It may give the kheer a darker color due to the color of the date sugar and a slight different flavor but it'll taste great.

  • @ash48643 : Rice flour is very fine powder and for Kheer the rice grains are important and taste great. We use Rice Flour for a diah called "Phirni" and it has very similar ingredients but tastes different and is YUM. We have it on our list of recipes to do - hopefully soon :)

  • i was wondering if i could use pecans? i have a big bag and need to use them was wondering if i could use them in this dessert. If i could would i first heat them to bring out some flavor or just use them like that?

  • @Richxx105 : Pecans are not available in India easily and are not used in Indian cooking and are not used in this dish traditionally. Having said that - you should try it, who knows, it may taste even better that the pistachios!

That was my first SMTC video and I since watched many of them and like A and H and am grateful for their recipes... but if I can't remove the comment, I'll just accept my mistake. By the way, many people are moving towards living foods and sugar-free recipes - so if we make food for the ones we love.....

    We usually have basmati rice on hand but any rice will work.

  • this recipe is nice, i am going to prepare n give my bf,hope he likes this very much,shall we add finely chopped reddish fruits to this like strawberries plums n cherries ,pomegranate etc.just i am asking a suggestions sister.

    Fruits are generally not added to kheer, especially sour fruits. You may try something like banana.

    She's speaking English, not Hindi and clearly the target audience is English speakers who may not be able to properly pronounce Desi words, so it helps to say it the way their tongues may be developed to pronounce words so they can ask for it when they go shopping.

    (BTW, I'm not White, nor Indian - I just love Indian food).

    We do use a lot of lentils and a lot more balanced meals.

  • I liked Manjula Aunty's recipe where you fry uncooked rice in butter first, then cook the rice in milk. I also don't like cooked raisins. My mom uses jaggery, not sugar. This recipe is Americanized fast-food version. Me no likey likey

    Both are personal tastes but you definitely can add them if you prefer. Edible camphor has a very strong flavor so be careful of how much you use...a little goes a long way.

  • thanks for the recipe...instead of cooking rice in the pressure cooker....try cooking it in milk...rice would have a lot more flavor..and also try adding jaagery ... :)...let me know as to how it turns out...if u try the variation... :)

  • @Preet256 : Yes, you can but the texture will be a little different. We suggest you mash the rice a little (very little) so it incorporates with the liquid.

  • If we want then can even cook this kheer in microwave. Good thing about cooking in microwave is that there is no need for constantly stirring it because a glass bowl is used for cooking. I've noticed that it also tastes better. Give it a try ;)

    And yes what ambubhai says is correct, ghee with uncooked rice can also be used but then rice should be soaked for an hour or so :)

  • Using a microwave impairs flavour & overall nutrition of the food you're cooking. Oven cooking ftw.

  • haha, infact the truth is the opposite. Neither nutrition nor flavour is affected in a microwave. Infact it turned out to me that kheer cooked in microwave preserved the aroma of cardamom, kesar etc, better than cooking on flame. It seems that some people have negative feelings about oven cooking due to their own lack of skill in understanding oven cooking.

    Furthermore, microwave affecting the nutrition of food is a common myth due to lack of understanding of its working.

  • It is ok for the nuts to be a little crunchy. It adds to the texture.

  • do we really need to cook the rice, as on the other day i was watching manjula aunty's kheer preparation and she didnt cook the rice, instead added with ghee and and then added milk, as is automatically cooks the rice, till the time the kheer is made....help me out pls!

  • It is just different methods for making the same dish. We feel this way is quicker, especially if you have some rice already.

  • You won't get the unique flavor of saffron with food color but you will get the color.

  • All dry fruits are optional. The kheer will taste great even without them.
