It´s not 15,000 ft, it less that 12,000 ft: if it were that high, an A330 would not get off the ground in 4,000 meters. Ask the people of El Alto airport in La Paz, Bolivia, which is at 13,900 ft.

I don't recommend taking flights in China. It is not safe at all. A lot of the times, the plane cruise at minimum altitude requirement or below it to use less fuel, which can be dangerous because there are more turbulance. Also, sometimes you can notice that most of the front row seats are open, and that is for a easier take off, also for fuel saving. This can be dangerous too because the plane can actually fail to take off.
Planes fly higher to save fuel, not lower. That's why they do step climbs during cruise as they burn fuel and have less weight. The front row seats may be empty because of center of gravity limits mandated by the aircraft manufacturer. Loss of control may occur if center or gravity is out of limits.
Correct. The old weight and balance has to be in the correct envelope for TO. I felt that the flights were very safe. The crew was very professional. The girls were very attractive.

In Air China's 18 year history there has only been four accidents and only one of which caused fatalities.

There isn't many airlines to choose, surely.
Because the airport is so difficult.
I think if you want to fly from Beijing to Lhasa, you might have to stop at Chengdu...

Air China is fine the only thing I would advise is not to eat the food provided on the plane.
Flying from Beijing to Lhasa is not recommended as your body won't have time to get used to the high altitude.
You might feel very sick for a few days if you do either of the above.
