Tauren Troll Night Elf and Gnome (at least) as death knight it's just stupid, it makes NO sense at all that nature lovers like tauren and night elves could be DK.

you can buy a frost wyrm (currently modeled as a skeletal gryphon, but it's due to change) for 980g from Ebon Hold. Its speed scales to riding skill. And yes, unfortunately, you still need to pay full price for training.

A Deathknight can be played with all racces, just have a random character at level 55+.

How will the race of your DK be determinend?

Will it be the same race as the one you completed the quest with.

for example. completeting the DK with an Orc = Orc DK?

No, there is no quest to make one, you have to have a level 55+ charater on a server to be able to create one on any server.

As for the race, you can pick which race you want.

the lich king is actually a bad guy but when you make your DK you are also bad. In the final part of the quest chain you join the alliance or the horde and betray the lick king.

You don't betray the Lich King, he betrays you. Arthas sends you (under the command of Darion Mograine, leader of the Death Knights) to your deaths, fighting an impossible battle at Light's Hope so that Arthas can lure Tirion Fordring from the chapel and corrupt or kill him. You and your death knights are simply bait.

When you (and Darion) learn this, a battle takes place, and long story short, you wake up in the present in Light's Hope, attended to by the Argent Dawn. Arthas is pure evil.
