The car will light the tires at any speed. We took it for a ride and were probably running 80-90 at cruise and he laid into it a tad and it filled the car completely with smoke and left 100 ft of marks behind us. It's a bit scary IMHO. This car has never seen boost. MT street tires and this amount of HP don't go well together. Just touching the throttle will send the car to 7200 (rev limit) instantly. :-)

What do mean it has never seen boost? Do you mean nitrous? All superchargers make boost unless they're fake show pieces or broken.
Dyno would only go 1000/1000 and it made the 1000 lbs at 3800 or so and that was also right at 1000hp. The cam profile it has should make max hp around 6800-7200 according to the engine builder. He estimated it to be around1200-1300hp at the current underdriven level.
With those MT Sportsman tires there is no load on the engine at all and likely is not making any amount of boost because of that. 1-2 psi maybe if that? I personally haven't seen the boost gauge move when riding in it.

"Detuned" with torque for days down low. "only" 680hp on his dyno but stacks of room to play. I think the dyno was limited to 1000 and it made that at 3800 rpms.

Also in this video the carbs had crud in them and it wasn't idling/running correctly. It normally has a 3-500 blower surge.
