Well the 1 way exiting but total lack of entering pidgins leads me to think much much simpler. Big ass cage of pidgins inside the building, small concealed tunnel from the room to the billboard, and a minimum wage slave or broke ass magician slowly releasing pidgins one at a time. To impressive this would need 2 major things, 1. A full 360 shot of the sign, and 2. a scale of timeframe. Constant pidgins for a minute, boring, a month, impressive.

And it's not that they only showed us the right parts of the video, because if that were the case then nobody would find it impressive or interesting in the least if it were just a constant exchange of pigeons flying in and out.

The birds come in the bottom attracted by the seed, and can't leave the same way they came due to a ramp that closes the exit when their weight hits it (Like most wild animal traps) so they have to go out the top. It's just that the shortness of your comment made it seem like you were trying to belittle the effort put into making this illusion work. As for your one way trap, it would be difficult to place an entry point in such a place so that not only would be hidden from passer-by but would also be a short enough tunnel to the hat so the pigeons could find their way over (they're not very bright).
@serpechia Also, the bird seed brings up the question of how the illusion is kept up (whether or not somebody periodically comes to replenish the supply or what) and many pigeons would also be quite content with sitting in the hat eating birdseed all day without feeling the need to fly out and create the spectacle we saw. I didn't provide another possible solution because I couldn't think of one, not because my sole purpose was to be snarky.
