  • would love to have the sauces that he uses broken down, instead of just saying "brown sauce". there are so many variations to this dish, ive tried using a mix of fish sauce, soy sauce, oyster sauce and i still can't get it to taste like the thai restaurant down the street, LOL

    You need to use tamarind paste, galangal, and palm sugar. Get rid of the oyster sauce. It is probably taking the flavor mix in a direction that you don't really want. Also, you need a liberal amount of Thai basil leaves (make sure they are Thai basil leaves and not "Taiwan" basil leaves). Also, rip the leaves apart to allow the basil flavor to come out. Stir fry the noodles first utilizing a dry execution, then, add sauce for a wet finish. I hope this helps.
