for what it is worth ...I understand that the part of the fungi that we see and eat is the fruiting body (we normally call them mushroom) ...and like all fruits, berries, and nuts we can safefully pick all of the chosen fungi fruit visible
I also understand that following the fruit ('shroom) stipe to the base and gently breaking the intact fruit body away from mycelium leaves less surface area exposed to the air (extraneous bacterial invasion)
wasting alot of stem, it hasnt been proven plucking hurts the mushrooms, actually more mushrooms pop when the mycelia knows theyre gone when you pull the entire mushroom.
