It's Clarence Clemons from the E-Street Band, a band that Bruce Springsteen played/plays with a lot.

They put him in there because Adam Sandler pretended to be Bruce in a opening host monologue (Courtney Cox's) and they used a clip of Clarence from the "Dancing In The Dark" video, the song that Sandler was singing as Bruce Springsteen in the skit.

And because his clapping goes along with the beat of the song used in this video. :)
