@obliviousfafnir01 No. The concept of cooking with alcohol is that you get the flavor, w/o the alcohol. Yes, you will have some alcohol left, but it isn't enough to impair you. While the flavor of wine is nice, the alcohol in wine is bitter and doesn't help flavor the dish, that is why you want to cook as much out of it as possible.

I eat semi-raw chicken at restaurants here in Japan all the time. It is called "tataki." I wouldn't risk making it myself, but if the chef knows what they are doing there is no problem.
