@ezjapanesecooking The state park here stocks the lake with farmed trout. That is about as much fishing as I can get done in Vegas! I do however like to fish and I fish with my dad when I visit him. We fish in lake chatahooche in Ala. giant catfish, bass, carp, shad etc. Love salmon tho!

This might sound like a stupid question, but this is coming from a person that is just learning or trying to learn how to cook. I'm not real familiar with sake. When I go to a Japanese market, I just see lots of different bottles. Do you use regular drinking sake or is there a sake specifically made for cooking?
@kantishna39 Just get the cheapest sake. I use cheapest sake for cooking too. Among the cheap sake, I recommend "Hakutsuru" brand sake which is made in Japan. It's really good sake for price and good for drinking warm or at room temperature. Hakutsuru is available in 1.8 litre paper pack. It's much lighter than glass bottle. I prefer Sho Chiku Bai to Ozeki among even cheaper made in U.S.A. sake. Never use so called "cooking sake".

@mufazalov White wine may be too acidic for this particular dish, but you can try using white wine which is less acidic. Apple juice can be a substitute for Mirin which is like sweet sake, almost like dessert wine.
@leefuji If your local liquer store don't have sake, you can buy it online. I recommend "Hakutsuru" brand because it's cheap but good. Google "Hakutsuru Sake 1.80L" and you'll see online stores.
