Is this the one you meant? If so, it's from Giuseppe Verdi's opera (?) Nabucco, and it's called Chorus of the Hebrew Slaves, or simply Va Pensiero (the beginning lyrics).

All of this festival and procession music for the two films is by Coppola, including this. The Godfather Waltz, the Pickup (unused in the film), The Love Theme, Sicilian Pastorale, The Immigrant, Kay and A New Carpet, and all the variations of those themes, are Rota's.
