She was hurt that the man she loved could hide something so big with the woman he was going to share his life with. She was also tiered of having to hide while while he got to know his daughter.
Lorelai tells the psychiatrist that she has never loved anyone until Luke. She is ready for the "next phase", she wants to get married and have more children, and then because Luke hasn't heard from her in like a week and is taken aback by her sudden appearance, she sleeps with Christopher. Yeah, because that's the mature thing to do for someone who wants the "next phase" in their life. SMH.
I don't get how sleeping with Christopher changes everything. She did not cheat on Luke because they technically were broken up at the time. If Luke really wanted her, he would have said something like that does not matter. He is allowed to be peeved but he could say let's work through it and plan a trip for a week or month and get hitched. Lorelai was tired of waiting, she was a free woman she went and seeked comfort in Chris. As long as it is not cheating it should not be a big problem.

Luke has always been there for Lorelai, ALWAYS!
