Although I liked the visuals, the cook and his straightforward style I didn't particularly care for this recipe. For one it was kind of bland, so when I made it I added smoked bacon and onions. The only thing I regret is not folding in the egg whites which would have made it puff up more, like in the video. More like a souffle. I suspect he did that too even though it doesn't show it in the video.
souffle doesn"t retain the "puffed" appearance. You have to serve it right away otherwise it deflates. This recipe is basically a souffle but he lets it deflate...
wow, and I love quiche! though I thought it wasn't going to expand, but unlike brownies they do not leave the cup. I really got to go make some. I make mine with spinach.
There are those at the Culinary Institute of the Art's (CIA) who say adding salt to eggs while cooking will make eggs tough.
