looks great! maybe a piece of copper placed on top of the cake for the final 25% of the cooking time could effectively brown both sides of the cake?

Thinking... Is there room to mix in the bag the mix comes in? If there is room to pour in the liquid, fold down the top and mush it to mix; there would be one less thing to clean. ;)
