all of his shows make me calm and relaxed.. and hungry! unlike his chef contemporaries i feel like going to his house for sunday dinner with his family would be authentic...it would be genuine and unique - i like his french-american cuisine and approach to family dinners and get togethers.

To poach eggs the right way, make a vortex (like a cyclone) with a spoon in your boiling water and pour your egg right in the middle (the "eye" of the cyclone). The move of the water will nicely bring the egg white around the yolk.
