Hello Dani! I have always read how eggplant is very good for you, but all recipes I read or saw always involved cutting out and removing the skin. Like an apple, I understood the skin to be packed with nutrients. Thank you very much for showing me that the skin can stay on. Love the recipe with onions and garlic. Btw did you know there is even a very effective skin cancer serum who's primary ingredient is eggplant extract? Thanks again.

In your telling us everything about eggplant you forgot to mention that they can be male or female. Male fruit have a rounder dot on the end, less bitter and fewer seeds.

Just to comment on what someone else said -- I found this version to be far to salty for me and next time I will do a better job of wiping off excess salt when drying and that should solve it.

@DirectorMeadows I don't rinse the salt off, but when i pat the excess water off after draining, that lifts a bit of the salt off plus I don't add any extra salt when cooking. I never find it to be too salty... but I could see how it might seem that way.
I love eggplant. I didn't know about the water removal and you're right, my eggplant was a bit tough. I'm heading to Whole Foods tomorrow to get my organic eggplant.
@Phyle9 It's a salt that generally preferred by most gourmet chefs. It has a cleaner flavor than regular table salt and it's easier to season foods with it because of its rougher texture.
Before the video, I pretty much didn't know anything about an eggplant except its appearance. You're really good at what you do, informative and at the same time interesting!

Cook them in microwave for 2-3 minutes then roast them!
By the way peal the skin because the skin is tough and does not taste good!
