  • Thanks for your response! I really appreciate it. I do have another question for you - what are the pros and cons of eating "pickled" eggplant (as well as artichoke hearts, etc.) from companies like Unico etc.? I don't always have time to prepare from fresh and I have no idea about the nutrition value of this type of bottled goods. Thanks again :)

  • Hello Dani! I have always read how eggplant is very good for you, but all recipes I read or saw always involved cutting out and removing the skin. Like an apple, I understood the skin to be packed with nutrients. Thank you very much for showing me that the skin can stay on. Love the recipe with onions and garlic. Btw did you know there is even a very effective skin cancer serum who's primary ingredient is eggplant extract? Thanks again.

  • @hybridman007 So glad the video was helpful! And I did not know about the skin cancer serum... pretty cool!

  • in uk they call eggplant aubergine

  • Cook them in microwave for 2-3 minutes then roast them!

By the way peal the skin because the skin is tough and does not taste good!

101, marry me and you can have my Eggplant anywhere you want it!

    Keep this in mind:)

  • I just had our first eggplant harvest and they were great!

  • PUMP UP THE PURPLE PRODUCE!

  • whales.

  • Do you have to use Kosher salt when treating the egg plant? will table salt work also. My store does not carry anything but table salt. Also how long will it last after cooked? Fridge life. Do you need to rince off after salting for 30 minuts?

  • you look a little like Giada. gorgeous

  • Great vid!

  • Can I eat this raw?

  • @PolarBearGr Yes, you can!

  • You should tryout for Next Food Network Star or whatever the fuck it's called. You're awesome!

  • in my country eggplant is long and skinny

  • @1Nanalo well.. in america everything's obese so.

  • you are very well spoken, comfortable in front of the camera and good looking as the day is long. I THINK YOU SHOULD HAVE A SHOW ON FOOD TV!!!

  • Great Vid thx!

  • Soooooo informative :) first video of yours I've watched...can't wait to see more! (thanks to michele1218)

  • Here in Taiwan we usually have the long skinny variety but just today I came across a couple globes in a market, I was so pleased! On a three-day weekend no less (dragon boat festival), fire up the barbie! Will try that salting technique before grilling. Thanks.

  • I LOVE YOUR VIDEOS !!!!!!!!!!!!!!!!!!!

  • Eggplant is like a fine woman, she is intimidating at first, but once you understand her, she is approachable, then she will let you cook and eat her.

  • you are too cool

  • why are u filming my sister?

  • In your telling us everything about eggplant you forgot to mention that they can be male or female. Male fruit have a rounder dot on the end, less bitter and fewer seeds.

They are also members of the nightshade family.

  • Wow dani that was soo awesome! You answered all of my eggplant q's in under 5 minutes! You soo rock! I wish I had smell-o-vision!

  • Thanks, Dani! I used this video and my eggplant actually turned out correctly (aka not super mushy) for the first time. Just to comment on what someone else said -- I found this version to be far to salty for me and next time I will do a better job of wiping off excess salt when drying and that should solve it.

  • @knicoal Thanks for the feedback! I will definitely keep this in mind:)

  • I like you.

  • interesting...pfffft...I'd plant your egg...oh no I didnt!

  • I wish i would have seen this before I ruined my eggplant :(

  • @Phyle9 That's exactly right... I especially love it b/c of it's texture! Thanks for taking the time to explain!

  • OMG woow big eggplants u have there in america

  • @Mileenia Yep. These are called Globe eggplants and they are pretty big compared to all of the other varieties.

  • Thanks for all you do Dani. I just started my lifestyle change so I will need your channel to learn healthy recipes. You are wonderful.

  • @tavey123 Yeah! Congrats to you and your new healthy lifestyle! My recipes can definitely help you achieve you're goals without sacrifice SO enjoy them! Thanks so much:)

  • Do you have to rinse the salt off or do you just leave it on? Because it seems like that would be really salty.

  • @DirectorMeadows I don't rinse the salt off, but when i pat the excess water off after draining, that lifts a bit of the salt off plus I don't add any extra salt when cooking. I never find it to be too salty... but I could see how it might seem that way.

  • I love eggplant. I didn't know about the water removal and you're right, my eggplant was a bit tough. I'm heading to Whole Foods tomorrow to get my organic eggplant.

    :) Thanks!

    Cindy

  • @DirtKickerStudio Enjoy it! It is so delicious:)

  • @Phyle9 It's a salt that generally preferred by most gourmet chefs. It has a cleaner flavor than regular table salt and it's easier to season foods with it because of its rougher texture.

  • Before the video, I pretty much didn't know anything about an eggplant except its appearance. You're really good at what you do, informative and at the same time interesting!

  • Love the 101 video's. You make food less intemindating & I feel like I can actually do it!

  • i love your vids! better than the foodchannel!

  • @melissainthecity Yeah! I love that:)

  • I like how you made a video about some foods people may not be confident to cook in their kitchen

  • thank you so much! i was looking for a good video on eggplants, this was exactly it! You are amazing!
