Two more tips from my experience...
1.Sprinkle little salt to taste immediately after draining poha and give it a good toss and add little more salt when you saute' onions n green chilies to taste...

hi if you are not confident about getting perfectly roasted while preparing the dish. I would advice you to roast it in oil on a pan separately and then add it to the dish while cooking. Keep medium flame, then add chana dhal, put your NOSE into action. If you get a smell, it ll be ok after 5 seconds. but if you leave it bit longer like 15 seconds, well enough for it to turn black.
i actually prefer this one, cause i cooked poha from another recipe and it was a disaster, i mean too many engridients, also they add ginger garlic paste it just over powered the whole thing. my husband ubsuloutely hated it. im gonne try this recipe and see how it turns out. if this tastes any where near as the other one i'm not going to cook this again.

A pinch of sugar is great with it. I learn't it when in Karnataka once..The sugar plays with the salt and lemon taste and the whole thing becomes round.
also, adding fresh grated coconut (after adding poha) makes it a royal treat!
I believe most Indian mushroom dishes are Indianized versions of foreign dishes that use mushrooms, but yes, Indian cooking uses mushrooms. Just google "mushroom curry" and you'll get quite a few recipes. Vah chef has a Indian style mushroom fry recipe too.

This is famous Marathi Dish "Kande Pohe" of course chana daal urad daal are optional ingredients. Thanks for sharing the recipe.
PS - Marathi version of "Onion Samosa" recipe you shared earlier uses Kande Phoe for "stuffing".....
