I'd recommend putting a microphone on your talent. A well placed lav mic would work well. You can either wire it into your camera directly, or hook it into an audio recorder, such as the Zoom H2, H4, or even better H4n. These would also give you directional audio.
I also would recommend that you use a tripod with a fluid head, though I admit that your handheld work is exceptional.
