Because it isn't paint. Remember this is clay he's working with so paint would burn right off in the kiln. if I am right the process he is using is sometimes called scrafito or sgraphito. This is where colored slip (clay mixed with lots of water and a pigment like iron oxide) is brushed on and let dry, then it is scraped off. This guy is real good though, he takes sgraphito to a new level of mastery i'd never seen before.
