The Mexicans were battling the Cherokee and Apache long before the white man. Mexico used to offer $100.00 per Apache scalp.

My spontaneous thought is that all these remains of people who were eaten are the remains of the people who built the advanced cities and civilisation in the region. They were overrun by cannibalistic savages who slaughtered and ate them, and their broken bones have been laying around in their deserted cities ever since.
